All The Way From Hiroshima: Savouring Okonomiyaki in Jordan – 広島からはるばるヨルダンへ:広島風お好み焼き

Beloved Japanese chef ICHII Kaoru delighted visitors with his delicious cooking of Hiroshima-style Okonomiyaki and his impeccable cooking style during his visit to Jordan in October 2022.

For the first time in Jordan and in collaboration with the Jordan Tourism Board, the Embassy of Jordan in Japan, Otafuku Sauce Company,  the Grand Hyatt Amman Hotel and Jordan-Japan Friendship Association, Japanese soul food known as Okonomiyaki was introduced by one of Japan’s top Hiroshima-style Okonomiyaki chefs Chef ICHII Kaoru. Visitors got to experience first-hand the preparation of this delicious and versatile dish.

Chef ICHII Kaoru, lauded as the best Hiroshima-style Okonomiyaki chefs of his generation and owner of the first restaurant to be mentioned in a Michelin Guide, brought all the way from Hiroshima his famous recipes and exquisite sense of gastronomy.

Okonomiyaki is a dish that is gaining popularity in various parts of the world, and is the closest thing to being Japan’s soul food. It is a grilled pancake-like dough topped with a variety of ingredients, hence its name, which literally means “Grill it as you like it” (“okonomi” meaning “as you like” and “yaki” meaning “grilled.).

The history of Hiroshima-style Okonomiyaki carries with it the peaceful role of food in bringing comfort and solace to people in distress. Following the bombing of Hiroshima in 1945, people faced shortage of food and began mixing different food ingredients, such as cabbage eggs, Yakisoba noodles into a batter in order to escape hunger, creating the modern day Hiroshima-style Okonomiyaki. Since then, and thanks to the lifelong passion of people like Chef ICHII, Okonomiyaki has been increasingly identified as part of an important food culture that is flourishing in different regions of Japan, and in the world.

During his visit, Chef ICHII will shared his journey of elevating Japan’s soul food into top flight Japanese cuisine. He  demonstrated his famous dish and introduced it to Jordan where everyone can experience a heartwarming facet of Japanese culture. Chef ICHII also shared his experience and demonstrated his cooking techniques with students at the Royal Academy of Culinary Arts where he oversaw an Okonomiyaki fusion-cooking contest by the students.

Chef ICHII will also toured Jordan’s fabulous historic sites and iconic treasures including Petra and Wadi Rum.

ヨルダン政府観光局、在ヨルダン日本大使館、オタフクソース株式会社、ヨルダン日本友好協会、グランドハイアットアンマンホテルの協力のもと、ヨルダンで初めて、日本のソウルフードであるお好み焼きを、広島風お好み焼きシェフの市居馨さんが紹介しました。 来場者は、お好み焼きの作り方を直接体験することができました。




今回のヨルダン訪問では、市居シェフが日本のソウルフードを一流の日本料理へと昇華させるまでの道のりを紹介します。 市居シェフはヨルダンで誰もが日本文化の心温まる一面を体験できるよう、彼の特別なお好み焼きの調理を実演します。
